(serves 4)
Ingredients:
• 4 organic chicken breasts, boneless and skinless
• 3 TB. coconut oil
• ¼ cup fresh squeezed orange juice
• ¼ cup honey
• 1 TB. cumin
• 3 cloves garlic, minced
• ¼-½ tsp. salt per chicken breast
• Freshly ground black pepper
Directions:
1. Preheat broiler and place oven rack on the top shelf
2. Pound chicken breasts to uniform thickness (about ¾-1” thick) and season both sides of each breast with salt and pepper. Place in a greased baking dish.
3. Whisk coconut oil, honey, orange juice, cumin, and garlic together and pour over chicken.
4. Place baking dish on top rack of oven and cook 3-4 minutes. Flip once, then broil the other side for another 3-4 minutes until the sauce is bubbling and chicken has begun to brown and is cook all the way through. Broil a few minutes longer if necessary.
5. Slice & serve with sauce spooned on top.
