Ingredients
- 125g butter, softened
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 1 cup plain flour, sifted
- 1 1/2 teaspoons ground ginger
- 1/2 cup buttermilk
- 2 cups Healtheries Berry & Apple Bircher Muesli
- 1 small green apple, core removed, finely diced
Method
- Preheat oven to 180°C. Line 2 to 3 baking trays with baking paper. Using an electric mixer, cream butter, sugar and vanilla in a bowl until light and fluffy.
- Stir in flour, ginger and buttermilk with a large metal spoon until well combined. Add muesli and apple, stirring until just combined.
- Drop tablespoons of mixture onto prepared baking trays, allowing room for spreading. Flatten slightly with fingertips. Bake for 15 to 20 minutes or until light golden. Stand for 5 minutes, then transfer to a rack to cool.
