Barbecued mushrooms and asparagus

Celebrate Easter with a sumptuous spread of festive foods with a twist!

Ingredients (serves 8)

  • 8 flat mushrooms
  • 2 bunches asparagus, trimmed
  • Olive oil cooking spray
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice

Method

  1. Preheat a barbecue or chargrill on medium-high heat. Spray mushrooms and asparagus with oil. Cook for 2 minutes each side or until just tender.
  2. Place vegetables on a large plate. Drizzle with oil and lemon juice. Season with salt and pepper. Serve.
