Ingredients
4 medium sweet potatoes, cubed
1 onion, chopped
1 garlic clove, diced
½ tsp. turmeric, plus more, if desired
½ tsp. chili or chipotle powder, plus more, if desired
Juice of ½ lemon
Extra virgin olive oil
2 Tbsp. fresh parsley, chopped
Pinch of sea salt, optional
Directions
In a medium-size skillet over medium heat, heat olive oil. Add garlic and onions and sauté until fragrant.
Add sweet potatoes and stir in turmeric, chili powder and lemon juice. Add more oil, spices and sea salt, if desired.
Cook until all sides of potatoes are crispy.
Remove from heat and add fresh parsley.
