Chunky berry and apple muesli biscuits

  • 125g butter, softened
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup plain flour, sifted
  • 1 1/2 teaspoons ground ginger
  • 1/2 cup buttermilk
  • 2 cups Healtheries Berry & Apple Bircher Muesli
  • 1 small green apple, core removed, finely diced


  1. Preheat oven to 180°C. Line 2 to 3 baking trays with baking paper. Using an electric mixer, cream butter, sugar and vanilla in a bowl until light and fluffy.
  2. Stir in flour, ginger and buttermilk with a large metal spoon until well combined. Add muesli and apple, stirring until just combined.
  3. Drop tablespoons of mixture onto prepared baking trays, allowing room for spreading. Flatten slightly with fingertips. Bake for 15 to 20 minutes or until light golden. Stand for 5 minutes, then transfer to a rack to cool.
