Banana & coconut porridge

Ingredients (serves 4)

  • 150g (1 1/2 cups) rolled oats
  • 875mls (3 1/2 cups) milk
  • 3 ripe small bananas, sliced
  • 35g (1/2 cup) shredded coconut
  • 1/4 tsp salt
  • Brown sugar, extra shredded coconut and extra milk, to serve


  1. Combine rolled oats, 750mls (3 cups) of the milk, bananas, coconut and salt in a medium, heavy-based saucepan and stir over high heat until boiling. Reduce heat to low and simmer for 10 minutes or until rolled oats are tender, stirring frequently and adding the remaining 125mls (1/2 cup) milk if necessary to reach desired consistency.
  2. Spoon porridge into serving bowls, sprinkle with brown sugar and extra shredded coconut and serve immediately with the extra milk.


  • A delicious, energy-packed start to the day. 30g (1/3 cup) desiccated coconut can be substituted for the shredded coconut if desired.
