Step 1:
Bring meat to room temperature, approximately 30 minutes out of the refrigerator.
This one step is half the battle!
Step 2:
Heat the grill on ‘high heat’ with the lid on top of the grill (Ensure the grill is covered while heating!)
Step 3:
Season your meat with salt, pepper (and cayenne if you like it spicy) and coat with butter (or olive oil if you’re allergic to dairy).
Sage, rosemary and thyme also go very well with steak. The key here, keep it simple!
Step 4:
Place the steak on the grill and close the lid. Do not move the steak until it is well marked and has a light char, about 3 minutes.
Step 5:
Turn steak 90 degrees for another 3 minutes.
Step 6:
Flip the steak with thongs and base the hot surface with butter. Cook steak for another 3 minutes.
Flip another 90 degrees and continue to cook for another 3 minutes.
(Steps 4-5 are known as “The 3-3-3-3 Grill Method” and the KEY for getting a juicy piece of steak! This technique also creates those beautiful grill marks to make you look like a pro chef!!)
Step 7:
This is the final step! Simply continue to flip until desired doneness is achieved (making sure to baste the meat with butter each time you flip).
